Apple Cinnamon Yoghurt
Best prepared the day before:

1 Apple (peeled and cored)
Cinnamon
Yoghurt
Diet Lemon drink
Sweetener

Peel, core and slice the apple. Sprinkle cinnamon over the apple and cover with diet soft drink. Cook until apple is very soft. Allow to cool then using a blender puree the apple, then mix through the yoghurt. Refrigerate until ready to eat.

Asparagus with Poached Egg
Asparagus (If they are thin this can be quite a bit)
1 Egg (poached)

Microwave or steam asparagus, top with poached egg, sprinkle with pepper and a little salt. Wonderful at any time of the day!

Baked Eggs With Field Mushrooms
1 Egg
Field mushroom (approx 2/3 of vegetable allowance)
Capsicum, tomato, onion (chopped - approx 1/3 of vegetable allowance)
Cracked pepper and parsley

Spray small pan. Remove mushroom stems. Place mushroom in dish, dark side up. Sprinkle chopped vegetables over the top. Season with cracked pepper. Pour egg (straight from shell, or whisked with a fork) over mushroom and vegetables and bake in medium to hot oven, or under grill, until egg is cooked. Sprinkle with parsley and serve.

Brekky Yoghurt with apple and cinnamon
Natural yoghurt (allowance)
medium Pink Lady apple
cinnamon

In a small bowl chop apple and sprinkle cinnamon over top. Microwave for 30 seconds to steam. Remove from microwave, add yoghurt and stir.
Made for those who dont like the taste of natural yoghurt!!

Chinese Omelette
1 egg
cabbage (from allowance)
onion (from allowance)
slice of tomato (from allowance)

Heat frypan, spray oil. Finely shred cabbage and a small amount of onion. Roughly chop slice of tomato. Whisk egg and 1/2 eggshell of water together. Place veggies in pan and lightly stirfry. When cabbage begins to wilt, pour egg over the top and move pan to spread egg thinly.

May need to turn or finish under the grill to cook all egg (depends how thick it is).

Serve with a little freshly ground black pepper.

Coffee Yoghurt
Yoghurt allowance
Half teaspoon coffee or to taste
1 sachet of artificial sugar

Add a very small amount of hot water to dissolve coffee, then add sachet of artificial sugar and stir.
Stir the coffee mix into yoghurt really well and enjoy.

Crunchy paw paw and kiwi yoghurt
1 paradise light white crispbread
low fat natural yoghurt (allowance)
1/2 paw paw allowance
1/2 kiwi allowance

Cut up fruit and mix with the yoghurt allowance.crush crispbread in a bag until it is in small chuncks. Don't crush too much that it is in crumbs. mix the fruit, yoghurt and crispbread together.

Fruity Yoghurt
1/2 honeydew melon allowance
1 kiwi fruit
1 crispbread
Yoghurt allowance
2 x sugarine tablets

Blend Honeydew melon to puree together with sugarine tablets. Mix through yoghurt. Cut kiwi fruit into cubes/slices, add to yoghurt. & top with crumbled crispbread. Mix through or serve on top.

Mango
Weigh mango portion on shopping day and freeze.
Cut up frozen chunks and add to blender with yogurt allowance. Because the mango is frozen, it comes out all thick and creamy like ice-cream. It is my favorite breakfast EVER! Don't eat it too quick or you'll get brain freeze!!

Mango/Yoghurt Smoothie
Yoghurt allowance
Mango allowance
Splash of diet lemonade
3 ice cubes

Blend all together until thick and smooth

No sugar but spice and very very nice in fact just peachy- Yogurt
Peel a peach

Place in small oven dish, splash with diet sprite sprinkle with cinnamon and nutmeg.
Bake until soft.. approx 1 -1/2 hours depending on ripeness of peach.
Allow to cool and place in fridge.
To serve
Remove flesh from stone- (flesh just falls off)The diet sprite,peach juice and spices forms a lovely syrup in the baking process.
Spoon/dollop the peach flesh onto your yogurt with a little sprinkle of sweetener and drizzle with a little of the syrup.

I serve it in a champage glass and its looks and tastes spectacular.

Orange Yoghurt Smoothie
1) Orange (allowance)
2) Yoghurt (allowance)
3) Sprite Zero
4) Sweetener

Peel Orange, cut into cubes and freeze overnight.
Put Yoghurt, frozen orange cubes, sprite and sweetener into blender and blend.
Pour into glass and serve immediately.

Spainish Omelete
1 egg
garlic granules
finely sliced zuccini (allowance)
finely sliced mushroom(allowance)
finely sliced green capsicum (allowance)
salt and peppar
In a teflon frypan spray a light mist of oil then add the vegies and the garlic and cook for 2 minutes. Add the beaten egg. Cook for another minute or 2. Add the salt and pepper at this time. Be light with the salt. When cooked you can fold it over in half. If you can't fold it just break it up a bit and fold over each section.

Cut up orange and add to yoghurt including juice..
Change from Apple. Refreshing

apples, (allowance)(which have previously been stewed)
Cinnamon (allowance)

Place yoghurt in bowl, add apples, sprinkle with cinnamon and sweetner. Stir all together. Nice way to eat yoghurt, also the apples can be eaten by themselves as part of your fruit allowance, with a little cinnamon and sweetener

(I buy a bag of Granny Smith apples, stew them, do not add water, as this makes them too sloppy, also don't add sweetner,apples taste better if the sweetner is added after, especially if you are eating apples with the yoghurt and cinnamon.
